02 - In a small bowl, whisk together sour cream, mayonnaise, lime juice, salt, and pepper until smooth and well combined.
03 - Heat tortillas in a dry skillet or microwave until soft and pliable, about 30 seconds per side or 20 seconds in the microwave.
04 - Spread a spoonful of sauce onto the center of each tortilla. Layer with lettuce, tomato, onion, avocado, cooked beef, and shredded cheese.
05 - Fold in the sides of the tortilla and roll up tightly to enclose the filling. Slice in half diagonally if desired. Serve immediately or wrap in parchment paper for a portable lunch.
