→ Slider Assembly

18 - 8 slider buns
19 - 1 cup arugula or baby spinach
20 - 1 small red onion, thinly sliced
21 - 1-2 tbsp olive oil for toasting buns

# How To Make It:

01 - Rub the steak thoroughly with olive oil, kosher salt, and black pepper. Allow to rest at room temperature for 15 minutes to absorb flavors.
02 - In a mixing bowl, combine softened butter, minced garlic, lemon juice and zest, Dijon mustard, Worcestershire sauce, smoked paprika, cayenne pepper, chopped parsley, chives, dill, red pepper flakes, and salt. Mix until smooth and creamy. Set aside at room temperature.
03 - Heat a grill pan or skillet over high heat. Sear the steak for 3-4 minutes per side for medium-rare, or adjust time to achieve desired doneness. Remove from heat and let rest for 5 minutes, then slice thinly against the grain.
04 - Brush slider buns with olive oil and lightly toast in a pan until golden brown and crispy.
05 - Spread a generous layer of cowboy butter on both halves of each bun. Layer with arugula, sliced steak, and red onion slices. Place the bun tops on each slider.
06 - Serve immediately while warm.

# Expert Advice:

01 -
  • The cowboy butter melts into warm steak creating an irresistible sauce that drips down your hands
  • These disappear faster than you can cook them, making you the hero of any gathering
02 -
  • Always slice against the grain or your steak will be tough and chewy instead of tender
  • Let the cowboy butter soften completely before mixing to avoid lumpy butter
03 -
  • Let the steak rest before slicing or all those delicious juices will end up on your cutting board instead of in your sliders
  • Warm the buns in the oven while the steak rests so everything comes together at the perfect temperature
