01 - Heat a skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess fat and set aside.
02 - In the same skillet, add diced onion, minced garlic, and bell pepper. Sauté for 2-3 minutes until softened. Transfer the beef mixture and sautéed vegetables to the crockpot.
03 - Add corn, diced tomatoes with their juices, green chilies, black beans, and kidney beans to the crockpot.
04 - Pour in the beef broth. Sprinkle taco seasoning, cumin, black pepper, and salt over the ingredients. Stir everything thoroughly to combine.
05 - Cover the crockpot and cook on Low setting for 6-7 hours or on High setting for 3-4 hours until flavors are fully melded.
06 - Taste the soup and adjust salt or pepper if needed. Serve hot accompanied by your choice of toppings.
