# What You Need:

→ Fruit Base

01 - 2 large ripe peaches, peeled, pitted, and sliced
02 - 2 tablespoons fresh lemon juice

→ Ginger Syrup

03 - 1/4 cup fresh ginger, peeled and thinly sliced
04 - 1/2 cup granulated sugar
05 - 1/2 cup water

→ To Serve

06 - 2 cups chilled sparkling water
07 - Ice cubes
08 - Peach slices and fresh mint for garnish (optional)

# How To Make It:

01 - Combine ginger, sugar, and water in a small saucepan. Bring to a boil over medium heat, stirring until sugar dissolves completely. Reduce heat and simmer for 3 minutes. Remove from heat and allow to cool. Strain out ginger slices using a fine mesh strainer.
02 - Add peeled, pitted peach slices and fresh lemon juice to a blender. Puree until completely smooth, approximately 30-45 seconds.
03 - Pour peach puree into a pitcher. Add 1/4 cup prepared ginger syrup. Stir thoroughly until fully incorporated.
04 - Fill four glasses with ice cubes. Distribute peach-ginger mixture evenly among glasses, approximately 1/4 cup per glass. Top each glass with 1/2 cup chilled sparkling water. Stir gently to combine without losing carbonation.
05 - Add fresh peach slices and mint sprigs to each glass if desired. Serve immediately while chilled.

# Expert Advice:

01 -
  • The homemade ginger syrup hits differently than store-bought, giving you that warm buzz that balances the sweet peaches perfectly.
  • You can make the components ahead and assemble them in seconds when guests arrive.
  • It looks impressive served in tall glasses with those floating peach slices but requires almost no real effort.
02 -
  • The ginger syrup keeps for two weeks in the fridge, so I often make a double batch and use it for everything from iced tea to cocktails.
  • Over-blending the peaches can make the mixture frothy, so pulse just until smooth and you will avoid that weird foam layer on top.
  • Adding the sparkling water last and stirring gently is the secret to keeping those bubbles lively instead of flat and sad.
03 -
  • Peel ginger with a spoon instead of a vegetable peeler to navigate all those knobby bits without wasting any of the good stuff.
  • If your peaches are underripe, add an extra tablespoon of lemon juice to brighten the flavor and compensate for the lack of natural sweetness.
